Because of our Thyroid. Our thyroid can either slow down or speed up after a while. For men, it's a bit easily for them to lose weight when you concern genetics, diet, and nutrition. For women past child-bearing age, its gets a lot more difficult because we need the body fat in order to have healthy pregnancies and healthy children. Men do not need to go through that process and stage hormonally in life. Menopause also can be an issue. Everything that our body makes goes through and process through tour thyroid. Hypothyroidism increases our weight unintentionally, while Hyperthyroidism causes us to lose weight unintentionally. Intestinal worms and other disease can also take affects around 30 and past 30 because it's that peak in our genetics where we start to lose all of our nutrients that make's up our body and slows down little by little as we age. Some can start as early as 25.

We're really not meant to live much beyond 30. All this keeping on living we're doing what with industrialization and medicine would be great if along with prolonging our deaths they also kept the quality of life at the level we would die enjoying if we only lived as long as our cave dwelling ancestors.
That said, look into ketogenic diet. I shit you not bro, I drop over a pound a day eating shit like bacon and cheese. It's basically high fat, moderate protein, no to very low carbs. Throw in some basic lifting and light cardio, pounds fly off.

After 25, your metabolism isn't what it once was. It's a sad and unfortunate part of aging but we all go through it.
Available time, age related infirmaties, and age related declines in metabolism caused by decreases in muscle mass and mitochondrial metabolism.
I'd think because of the metabolism is much slower than before.
