Is it possible that she lost interest and found someone else and is trying to “let me down easy?”?

Would you stay friends with someone who you were seeing/talking to from work who is 9 years younger than you, who you hung out with outside of work and during Valentine’s Day (where you got each other gifts, cooked for her and kissed your way out the door) just to have her tell you that she wants to just be friends because she doesn’t feel independent enough/ready to continue seeing you in that way? Apart from the fact that she claims to be too busy to make time to see you what with going to school and working on the weekends?

Is it possible that she just lost interest and found someone else and is trying to “let me down easy?” Even though she was the one who wanted to get with me in the first place? She posts on her Instagram story a lot of crying HelloKitty posts and stuff like that sending the message that she is distressed about the situation.
