If you want an everlasting love then it would be difficult, especially if you had romantic feeling for them and they didn't for you.
If you just want a physical relationship I don't suppose it matters.

It would depend whether I believed them. Most people who say they don't believe in love are just angry/hurt. I would see no utility in dating someone who is incapable of love.
