How do you know if someone is truly interested?

I currently like a girl. Sometimes i feel like she's interested, and sometimes i have my doubts. Is she just being nice or is she interested? I'm not looking for signs if someone likes you or not, but more so how you should feel if someone does. Is it okay to have doubts and feel insecure?

I know love is hard, there's ups and downs, even in the early stages.
