She likes me but doesn't text me?

I like this shy girl and she said she likes me too. We've hung out a few times and everything seems fine. Even though we are a bit shy and nervous around each other, we can talk in person without any problem and sometimes she'd even break the touch barrier. Generally speaking, she has displayed many signs of interest in person.

However, when we are texting she doesn't seem too into it. Sure, there are times that she'd text with long and sweet replies but there are also times she'd give rather boring or slow response. Sometimes she'd keep the conversation going for a while before she suddenly stops replying. I asked her if I'd annoy her by texting her she said no though. Once I told her she can text me whenever she likes because I'd be happy to hear from her. She said something like ''Sure, no problem! Just don't think I'm annoying when I text you :P''

But still, she rarely texts me. Should I still text her? I'm feeling a bit discouraged.
