Is he interested in me or not? Mixed signals?

Hey guys so I work with my crush and we get along well. We have been working together for about a month. Whenever I am near him and he hears my voice - whether or not he's with a customer - he'll turn around, look at me and smile. I always catch him staring at me, an when I catch him, he holds eye contact for a second then looks away. One thing I have noticed is that he will try to get close to me and his pupils dilate a lot. When we talk, he blushes, giggles, and covers his face - feels his face too. He also is always there when I need help or when I am stuck with something... for example, today I came to work recovering from a cold and it hurt to talk and there was 1 customer and I was like "man I can't even talk" and I laughed, semi-joking, and he was like "oh I'll deal with the customer for you, it's ok!"I am also pretty sure he talks with this one male coworker about me because when I walk towards them, they will see me and instantly terminate the conversation. Also, a couple of days ago, I wrote my snapchat username on a piece of paper and I wrote "if you ever want to talk/change shifts, add me!" and I put a smiley face after. He almost instantly added me back. Both my best friend and my mom have been with me at different times and have seen this behavior and think that he is definitely interested. While this is all good, I feel like he doesn't like me, because when I messaged him "hey" a few days ago, he opened the message and ignored me. Also whenever I talk to him he always gives me one word answers or one sided answers... ex: when I ask him what he is doing for New Years, he said "probably nothing" and doesn't ask what I am doing. Or when I ask how his day is going he will say "good/ok/fine/etc" and not ask how mine is going. I am not sure if I am reading all of this wrong? Or how to clarify with him if he wants to date me or not. He is also a shy guy. What do I do? How do I know if he is interested or not w/o straight up asking him? Please help... Thanks
