I was talking with a guy - and in the middle of conversation he picks up a transparent plastic wrap that I dropped on the floor unknowingly - so I wondered what he was doing as he bent down unexpectedly, so I also bend down with him and we both hit her heads --- so why did he bend down all of the sudden unexpectedly? how to tell him to not pick up my things for me as I dont like people doing my things for me?

Aw man, that's awkward that y'all bonked heads! But I can see why him suddenly bending down would catch you off guard.
The best way to handle it is just be straight up. Next time you're chatting, casually bring it up by saying something like "Hey, I noticed last time when I dropped that wrapper, you tried to pick it up for me. I really appreciate the thought, but usually I prefer doing things for myself. No big deal, just wanted you to know for the future."
Say it with a smile so he knows there's no hard feelings. Guys can sometimes think they're being helpful by doing little things, when really it's better to let a girl do her own thing.
If he's a good dude, he'll understand. And it sets a clear boundary without making a big deal of it. Just be confident and own doing your own stuff. He'll get the message loud and clear. Problem solved!
