All bell peppers are the same species (Capsicum annuum) and start out green. Different colors are just different varieties, similar to how there are thousands of tomato varieties within the same species. There's at least one variety of bell pepper that stays green through ripening. However green bell peppers you find in the grocery store are just unripe red bell peppers. Bell peppers of colors other than red or green are just other varieties of bell pepper that ripen into different colors. Red, green, yellow, and orange are not the only colors bell peppers can be found in.
nope the green bells i buy don't "ripen red" they get darker if i don't use in time.
@strateguy632 That's because once they're off the vine, they stop ripening and start spoiling. They're not like bananas. We grow bell peppers in our gardent. You can pick them green, or leave them on the vine longer and they turn red. You can pick them when they're in between too. This ain't rocket science, that's what happens! LOL

I like them both, depending on what dish I'm adding them to.
I much prefer red if I'm eating them raw like in a salad or on a veggie platter with dip.
I like green peppers better.
Red in a green or white sauce, green in a red. Need to consider the visual aesthetic as well as the taste.
Red is more on heat, green is more on aroma so i go with green. If i want it hotter, i can always add more green peppers which not only makes the food hotter but it gives it a much more pronounced peppery taste which is what i like. Also red ingredients are much more common and brighter so green peppers gives better contrast to the color.
I meant generally. But when it comes to bell peppers, red maybe sweeter but you just almost can't taste the difference if it's cooked with other ingredients.
yes but they are for different things. red is typically a bit sweeter in flavor. meaning it goes better with certain foods while green is more bitter and pairs better with things like sautéed garlic, onions, zucchini etc.

That depends on the meal. Each is better for specific recipes I have. That said, if I'm asked to choose which one I prefer on it's own, it's red.
I like both, and TBH, never noticed a big difference between them, other than color.
Of the two, I like red pepper. It is delicious both raw or roasted.

Not really picky about bell peppers. I prefer spicy peppers like Habanero or Ghost.
I prefer hot peppers..
But between those two I actually like them both equally, though green peppers a bit more perhaps.. From my knowledge they both taste almost the same while hot peppers are radically different in comparison
If we are talking about bell peppers, they both taste about the same to me.
