I'm not talking about blends like taco seasoning, jerk seasoning, curry powder, masala powder, etc. I'm talking about certain herb or spice by itself. Also salt is not a spice. It's a mineral.

I get that there are people who prefer the natural taste of the food. Herbs and spices were used to mask almost rotting meat because in hot climates, they tend to spoil faster and there was no refrigeration. Not only to mask but also use them as preservative so that's why food and hotter climates are spicier and more flavorful. I'm a type of person who really enjoy overseasoned food. It's genetic but of course I also do appreciate natural flavors.

So far my favorite ones are

Spices: Black/white pepper, paprika, chili powder, cumin, onions, garlic (I will just count onions and garlic which technically aren't spices but they act like one just for plain people here), fennel seeds, caraway seeds, turmeric, galangal, cloves, saffron and allspice.

Herbs: Basil, cilantro, oregano, lemongrass, dill weeds and kaffir lime leaves.

I like most herbs and spices and I'm not sure if I actually dislike any of it but those are the ones I tend to put more than the others. Just depending on what I'm cooking or which one of them I like to stand out the most.

I didn't experiment once. I used every herbs and spices i have on a stew. No rules except they all just have to be natural herbs and spices. No liquid condiments or process seasonings. It was flavor bomb and I felt like a medieval king of spice trades! It didn't harm me at all.
