What kind of fat you prefer for cooking and baking?

Oh, you are talking about cooking 😛 I usually cook with rice bran oil but in some of my recipes I need some ghee and while in other recipes I user some butter. 🤤
Defo go through olive oil the most in our house.
My favorite cooking fat has to be extra virgin olive oil. Its robust and fruity aroma lends a beautiful richness to dishes, especially in Italian cuisine, which is close to my heart. I love its versatility, from drizzling over fresh salads to enhancing hearty sauces. For baking, though, I adore the nuttiness of browned butter, recalling the sweet scent of my first homemade batch of cookies. 🍪 Each fat has its story, adding depth and character to every dish.

For cooking and pan-frying always cold-pressed olive oil.
I only use real butter (my wife and I take turns making 4lbs at a time), tallow we rendered ourselves from a friends cow. We buy a whole cow once a year. Then real olive oil. Most olive oil isn't processed correctly. Olive also burns at a lower temp causing it to become toxic.
Olive oil for things that don't require high heat.
Sunflower oil for things that require high heat.
Margarine/butter for baking - depending on what I'm baking. And coconut oil when playing with chocolate.
I prefer butter for flavor. But for health, I prefer avocado oil or olive oil.
