Girl taking a long time to reply but always replies. Is she interested?

Hi, so this girl that I've been texting for the last few weeks seems to be sending me mixed signals. I don't really have much experience with this kind of stuff so I'm quite confused.

She mostly replies once a day, sometimes after 2 days (sometimes she reads the message and replies hours/days after) despite being online multiple times, even during the weekend when she even told me she doesn't have much to do. To me it seems that she is not very interested, but at the same time her replies are never one worded and they almost always include emojis and/or lots of long haha-s. Sometimes she will ask an unrelated question to continue the conversation and she even sent me a selfie once without me even asking. I asked her for a cup of coffee once the situation allows it and coffee shops are allowed to open and she said 'we could'.

I'm not really sure to continue or to just end the communication as her reply frequency is kind of annoying and to me it seems that she just replies for the sake of replying. She's a bit shy in person but I'm not sure if that is something I should take in consideration. I'm interested in hearing your opinion on this.

Buddy, she doesn't know WHY you're talking to her. You didn't ask her to date you, or that your sexually interested, or want to be a couple. She thinks your friends and wants to hangout as one. You people need to stop being so self-centered. If that is not what you want just tell her and move on. What you people do is why I don't trust men on that level anymore, not even friends now. I ain't dating somebody I just met. Or don't know about. It is my choice. Her being shy has 0 to do with it. OPEN UP YOUR MOUTH and tell her you to want to DATE HER, PERIOD. She is not sending you mixed signals. And no, it has nothing to do with no experience. You're not telling her what you want. COMMUNICATE that and respect her wishes. Get to know her as a friend. You just met. A girl's number etc is not an invitation to dating all the time. You must clarify that verbally. Again, go tell her now so you won't waste others' time.

If she replies then she's imterested. She just may be busy. She could no respond at all, but she still does.
