Girls, was my female colleague interested in me?

I would like to start off by saying that my colleague already had a boyfriend before all of these happened and I had left the company months ago. Anyway, moving on:

Whenever we have company lunches or dinners where everyone is seated together in a group, she doesn't initiate conversations with me, however, if someone else talks to me or I am the one talking to the group, she would chime into the conversation and before I know it, we are both engaged in the conversation and I could feel the chemistry going on.

Sometimes, she would be using her phone the whole time while the group is talking, so I thought she wasn't paying attention to the group conversations. But when I talk to the group, she would suddenly look up from her phone and chime into the conversation again, despite me thinking that she wasn't paying attention the whole time.

Another time, when my male colleague was sharing about his dating life, I asked the others about their dating lives, and instead of answering the question, another female colleague shot the question back at me instead (shot myself in the own foot). Then this girl who was quiet the whole time suddenly became very interested in my dating life, eyes full on staring at me with a smile on her face, asking me more questions about my dating life.

Once the lunch/dinner ended and the group disperses, she would sometimes approach me alone to ask me personal questions. Over here, she is shyer and no longer as outspoken, doesn't really dare to look me in the eye. She would ask what my favourite show was, including a random question about whether I was planning to buy a car in the future.

I am a little confused why she is so confident in talking to me when in group settings, but alone she is shy.
