Body language is usually subconscious, but that doesn't mean attracted. It can mean an open mind toward you, so an opportunity to talk. I think she might be open to forming an opinion of you, for whatever reason. you should say more than "hey" in passing, ask her what she thinks about something in the class? Maybe follow up in a few days and take it from there. Just don't blabber on constantly about what YOU think, be 50/50.
Only one person can answer this question. Invite her to lunch or coffee or whatever and you'll get an answer. My money is on "yes".
I think you need a little more than that to say she's interested. Try talking to her, if she likes you it'll be a huge giveaway if she's super giggly and shy. And try to look her in the eye, if she likes you she won't be able to hold the eye contact. (Also I'm saying this assuming you like her too)
I once tried to do that and when I was staring at her she looked over, and she quickly turned her head the opposite way
