My work crush walked into the break room while we were on break. We made eye contact and smiled at eachother, i then said "hi" but she didn't respond and looked around for snacks.

She is a shy introverted person, but was it just her being shy, or not being interested? or am i just overthinking it?

The only reason you're overthinking this is that YOU KNOW NOTHING!!! Make it clear to this woman, in the gentlest of ways, that you'd like to have coffee on her off day, or take a walk, or something mild and minor in a public place. If she says "No," then take this as the final word on her DISinterest and leave her alone and find someone else.

Work is usually not the best place to find SOs. If the relationship goes south, you have to see this person repeatedly. Isn't so great. Do a little more work and use meetups or other two-way interest sites where something in common is the basis of you possibly going out, or finding friends who can fix you up.
