Being a writer myself, it isn't you. It depends on his main character. Sometimes a difficult, neurotic person would go well with a sweet, patient person. But maybe he has a different main character, maybe it's a prince charming type this time, he might not want a fairy tale, so he'll make his love interest an off-beat clumsy, unconventional girl. So, it isn't as simple as saying, OK, I'm going to make everyone in my story exactly the same as in the last story because they're like people in my life.
He's using his creativity to actually create a fictional story. Yes it would be nice if some of his character's love interests were like you, but it may not fit the story. Why not ask him to write a story for you with you and him in it?

If this is bugging you so much why don't you plan a day for just you two and ask him why is he with you or why does he love (idk if already said that ) just ask him what he loves most about u?

It depends. As a writer, i do not plan how the character should be. I have to find out who he or she is. The idea just comes to me and i should create a character to suit it. Nothing personal for the writer, it Just rely on the idea.
This is a perfect example of why men are becoming more and more neurotic these days. Does it have to be about you all the time? You clearly are jealous or worry about his fictional characters. He's a writer, that's what he does. He makes up fictional characters and creates a plot line for them. Ugh... frustrating.
