My Boyfriend Didn't Wish Me Happy Birthday Even Though I Reminded Him That He Hadn't?

My birthday was this past Friday, 03/05. I was able to celebrate a nice lunch with family but most of my day was spent taking my boyfriend's car to the dealership to get serviced, picking him up from work to then drop him off at the dealership to pick his car up. We then drove from L. A. to San Fran for a birthday weekend trip. I am very appreciative that he spent my birthday weekend with me but he never wished me Happy Birthday. I even lightheartedly mentioned around 10 pm that he had not told me Happy Birthday yet, and his response was, "It's not over yet, is it?" To which I said no. I thought there must be a reason why he hasn't said it yet, but then midnight rolls around and we are 20 minutes away from our destination and he never wished me a Happy Birthday. So, a few minutes after midnight I said, "ahh, my birthday's over." I never mentioned it again the whole trip and still haven't. However, when we left on Sunday to go home, he picked a fight with me when I tried to convince him to split a crepe and omelet with me for breakfast when instead he just wanted pancakes. Nothing wrong with wanting pancakes, I was just being food greedy but also did not think it's a big deal, and once I realized he was upset I told him to get the pancakes and that I didn't mean anything by it. However, he said I don't respect his opinion because he wanted pancakes and I tried to get him to split something else with me. We ended up not getting breakfast at all and we didn't speak the entire 6-hour drive home. When he dropped me off, even though I was upset and we hadn't spoken, I still thanked him twice for taking me to San Fran to celebrate my birthday. He didn't say anything in response to my thanking him, just drove off, and we haven't spoken since. Someone, please help me understand his behavior.
