Why does this guy keep fidgeting around me?

So I’ve started a new job and I have a guy mentoring me. He’s very sweet and reassuring, always telling me how well I’m doing. In the fire drill when we got stuck outside in the pouring rain, he gave me his lab coat to put over my head.
One thing I’ve noticed when he is around me is that he fidgets a LOT. He can’t seem to sit still at all. We will be talking and he’s tapping his hands on something or he is fiddling with something.

Is this a sign of nervousness? If so, why?

He may like you but has some social anxiety, especially around girls. He may want to ask you out, even for coffee, but is afraid you'll say no and your friendship or work relationship will be ruined.

Fidgeting and these awkward body movements more often than not indicate nervousness. Might be overwhelmed/ intimated or just simply natural as is the case with many guys when they confront a girl they like or even if they don’t

It happens with some guys when they are with girls.
