Why do guys keep staring at girls for endless hours in a pub?

It's because there's this belief that if a woman is interested in you she'll give off "obvious signals" to you. So they're just waiting for your signals to let them know you're interested. Like when you're waiting for a phone call and you don't want to leave the room because you know that's when the call will come.
