I don't understand what he doesn't understand.

The bag is overpriced, he's got the extra money - I do not, he makes more, but I'm not dating him for that and I tried to explain it to him that it just doesn't feel right to me.

I do appreciate gifts, him wanting me to buy something is sweet but the bag is expensive asf.

He should be glad I didn't get it no?

Maybe he's trying to spoil you a little bit. Some guys like to spoil their girlfriends and buy them expensive gifts, it's their way of displaying their love towards their significant other. I completely understand your point, if you really do not want the gift and have talked to him about it, then he shouldn't be trying to buy it.

I'd love to have that bag but there are so much more needed things and I believe in saving money.
I'll try to talk to him about it calmly but he really is a hothead.

Just tell him what you want and it will fix everything. He trying to get you something and your denying it which in his mind he thinking “damn I can’t make this girl happy” or he doesn’t know the things you like. I had a girl try to buy me an expensive polo it was like 200$ I said return it and get me underwear and socks from target. Now I have unlimited underwear and socks which means I’m happy because that’s what I want. And I still got the polo for Christmas. Imagine your bag is my polo.
