Practical eating - I'm finding it challenging to get myself into a regimen which will help me lose weight. Would appreciate your help?

I'm working in a sitdown 8-6 job, I hardly give myself time to sit down and eat properly resulting in grabbed snacks (chocolate, crackers, nuts) and then meal at night and then few more snacks as still hungry.
It's obvious to say, just don't eat snacks, prepack food however I'm bothered by what to eat - people say avoid gluten, others say eat low fat/sugar free, others say eat low carbs, others say eat all in moderation. I'm 20-25 pounds heavier than I'd like to be. I changed to high fat good foods 3 years ago lost 10 pounds 6 months ago while cycling but gained since I stopped cycling.
Prior to that time I ate take aways and junk more often (working 24 hour slots) 1-3 x per week. I've stopped the take aways. I don't get to work out as end up working at home often too. Your input will be helpful to me please.

Thanks guys.. from both of your answers, I would deduce that eating food as natural as possible is key. However wholegrains seem to be controversial as well as diary products. What are your thought?
