Need health advice please?

I am a 17 y/o girl who is currently training in boxing.
I would like to compete in amateur fights at tournaments in about a years time, but I also need to keep a decent diet if I want to stay fit.
Does anyone have any ideas of some of the foods I could stack up on that would give me enough energy for training, but are also not too fatty?
I research things like a diet for boxers, but all they say is that I should load up in carbs; it makes sense, because it gives you energy, but I don't like carbs that much...😞
Any advice?
