Not at all, you need 3- I personally eat literally almost every 3 hours and no I'm not "fat", I'm 5'2 and 108 lbs. The more often you eat the faster your metabolism will be.. you've trained your stomach to be smaller therefor you're not hungry as much but if you do some days eat more than usual it might store into fat, so retrain yourself to eat more! Snacks are always good, but I eat those in-between meals

If you only feel like snacking then that's ok. Maybe just make sure you get a variety of food types in your snacking so like have yoghurt or some cold cuts of meat etc. That way you cover your nutritional needs. Also try to keep it at similar times. Eating haphazardly can create stomach issues.
I think it's too little, but I can't say anything, not rarely I eat just two meals.
It's not healthy to only eat one meal a day, but it's enough to not starve.

At the moment I'm the same on a lot of days... I never have breakfast so by the time I get up and shower etc, I'll have lunch, then not always be hungry for dinner. Just depends.
No, you shouldn't only have lunch/dinner aka 1 meal. If anything, breakfast should be you main meal of the day, as it gets your metabolism going at the start of the day so any other food you intake afterwards will be digested and absorbed by your body quicker. If you truly want to eat less and get really healthy, try only eating breakfast and lunch, then instead of dinner have your fruit or whatever.
No, that is not good, and sounds like you can get ill from malnutrition. I prefer eating small portions ever 3 hours. So I start at 6 am, then 9 am, then 12 pm, then 3 pm, then finally 6 pm. This keeps my body balanced and healthy (I am fit and work out, so it gives me energy throughout the day while providing the necessary nutrients).

No, you need to have all three balanced meals, with two snacks in between. This is anorexia, especially with very little food. It's not good for your health, and you are in a way starving yourself.
