You are sick because your body needs carbs. So you're going to need potatoes or rice if you don't want bread or pasta.
By having no carbs to burn, you go straight to burn fats, and if you have no fats left over you start to burn proteins.
Carbs are important for your energy, and if you start to burn protein, your brain function decreases and you may feel sick.
My advice to you would be to increase your carbs. I too left bread and pasta because I am gluten-free, so this leaves me with quinoa, rice, and potatoes to eat.

I have a lot of digestive issues and was recently diagnosed with IBS, lactose intolerance and have to watch my gluten intake. There are A LOT of things I cannot eat; therefore, I lost a significant amount of weight I already couldn't afford to lose. When I do eat foods I shouldn't, I get sick for extended periods of time. I'd say talk to your doctor who can refer you to a GI doctor.
You're probably eating something you're allergic to. You could have a gluten allergy. You could have a lactose allergy. Or you could have an allergy from the pesticides or enzymes in certain fruits and vegetables.
You should document what you're eating SPECIFICALLY, when you get sick, and what you're symptoms are. Take your results to a doctor, and have them evaluate you.

Maybe you lost weight too quickly. How many calories are you eating? It should be at least 1200-1500 a day. I was going to say you might be short of B vitamins but you say you got that checked. Maybe take a multivitamin just to be safe.
You should probably take extra vitamins.
