It would probably depend on a few factors.
Is it just her and I or are there other people around she could hurt or infect.
So if it’s just us out somewhere and we haven’t encountered any living people in a while, I would most likely hesitate. Depending on the relationship but let’s assume she’s the love of my life.
Two options come to mind. Capturing her and making it a goal to find the cure or let her infect me and join her, deciding life without her in an apocalyptic era would be unbearable. By becoming a zombie maybe I could survive hell with her until we’re both killed. I definitely wouldn’t be able to kill her without thinking about it. Another thing that could happen is me getting infected by default-spending too much time hesitating and getting bitten either by her or another zombie.
If we had children though my decision making might not be so thought out. If capturing her wasn’t an option I would have to kill her to protect our children. I’m thinking killing her would be my first instinct though because of parental instinct- then I would have wondered why I didn’t try to capture her and find a cure.
If we had no children but were close to civilization I’d most likely worry about her infecting innocent people. But again, without kids to protect I would be more hesitant. Curing her would most likely come to mind. I definitely wouldn’t think about becoming a zombie knowing that there’s survivors.
Going into the situation having thought it through? I would try to capture and cure her somehow. Killing her would be the last resort or a means to protect our children.
Reacting to a surprise situation and having to make a split second decision? My answers are above.
Never would I put er down. I'd either kill myself or run away if I could like say if I was already on a mission to save the remaining survivors.. I'd save all them, but after my mission is complete and after I had a chance to process everything that just happened.. I might consider just to kill myself, my girl would be gone, and I'd be alone with a bunch of zombies attempting to eat me everyday I can fight/survive for, but especially if she's gone.. I'd rather live in hell in that scenario cuz I'd basically be already living it

I'd probably wait until she actually turns into a zombie. According to the lore of the typical zombie movie, a very small number of people have an immunity to the zombie disease. If you kill the person before they turn, you'll never know if they were immune.
