Enchiladas

Yeah, it does say "chil" something but it's not that spicy, there are many types of enCHILadas and some won't burn your tongue, and definitely won't have the same effects taco bell produces. *Coughcoughdiarrheacough*

Pozole

One of my favorites. Some beef, some lettuce, chickpeas and radishes and damn, delicious!

Chilaquiles

Very easy to prepare and it's ready in like 20 minutes. Yeah, it also has "chil" in its name but it's not that spicy, I swear haha, put some cream on it and that's it.

Barbacoa

Not what I like to eat but it's nice. Most mexicans like it, if there are barbacoa tacos is even better haha, with some lemon this dish can be very tasty.

Chiles rellenos

ONE OF MY FAVORITES. Yeah, it's chili with some cheese and meat/chicken/whatever inside, but I swear that it isn't too spicy. Give it a try, I promise you won't die, and if you die, write a complaint form :)

Pancita

This shit is disgusting, but whatever, try it and tell me if you liked it lol. My family loves it, not my thing but hey, that's the good thing about the world, not everyone likes the same.

Mole

MMMM YEAH! My favorite dish right here, this thing is fucking amazing, it has CHOCOLATE in it, it has chicken, it has some chili, and other stuff that are damn yummy!

Fajitas

Very healthy and tasty, not greasy and perfect for strict diets. Has vegetables! so don't feel guilty, you can eat a good fucking amount of this shit!

Rajas

Damn, looks disgusting, but they're good, I swear lol. Can be spicy as heck, if my mom cooks it you better be careful, sometimes I think she wants to kill me :( but if my mom doesn't cook it then go for it. TRY IT.

Chiles en nogada

Never tried this but people won't shut their mouths about how awesome this thing is. I gotta try it and then I'll tell y'all how it went.

Most of this food is easily found in the southwest part of the US. Fajjtas and enchiladas are the basic safe items for any white person frequenting a Mexican restaurant. But there are a lot of dishes that people wouldn't even begin to appreciate from Mexico. The flavour is incomparable.

Gorditas de Chicharron Prensado, las Quesadillas de Huitlacoche o de Masa Azul con Flor de Calabaza, Tacos de Canasta/Sudados, Cochinita Pibil, Sopes/Huaraches, Albondigas, Pan de Nata, Churros rellenos de Cajeta o Lechera, Tortas de Milanesa, Pipian, Birria, and so much more that I either have a hard time finding or can't find the closest tasting of that of the Motherland.

I remember posting a question many months ago asking about what kind of food people eat in Mexico. I don't assume that Taco Bell-style food is what Mexican families eat every night. You know, maybe they just have broiled fish and mashed potatoes some nights; I don't know.

I went to a Mexican place once for a meeting with Donald Trump. The food was terrible. Donald went to the bathroom and clogged the toilet and the toilet started overflowing. Me and Donald security guards went into the kitchen and beat the fuck out of all of the chefs. And then we beat the fuck out of waiters and all the customers there. By that time, the overflowing toilet was creating a flood in the rest of the restaurant. So we got out of there. A few hours later the whole town was flooded, because of that one clogged toilet. Hundreds of people got their homes ruined in the flooding from the toilet.

I haven't had most of these, but with as many Tex Mex restaurants as there are around here, I've at least been exposed to a few haha. From this list, I've had enchiladas, barbacoa, and fajitas plenty of times.
I'm not a huge fan of spicy food so I tend to stay away from a lot of Mexican food xD

Luckily, there are some decent Mexican restaurants around my home that probably have these. Maybe it will help me brush up on my Spanish too-- they hardly speak English lol... but hey, I guess that means they are at least authentic, right?

I've tried something very similar to Chiles en nogada
Never had Chiles rellenos but I make stuffed peppers which I then smoke on a grill so it's kind of similar.

And then I have a great book with a lot of great old and new world foods so I've made.

@ConsultantIsBack As I've said before I like it here and we actually have authentic Mexican food a family owned restaurant run by actual Mexican immigrants ( legal ones ) been feeding us for 40+ years, the food is as authentic as you can get without actually going into Mexico and is quite frankly delicious, easily the best I've had, everything is homemade to, which is a plus.

@asker yeah it is lol, but damn if your food isn't filling, can't eat it all the time but it's great when I do. And hehe yup all about getting that recipe down, otherwise don't matter what culture's food your cooking it won't be great.
