It really depends on the girl, but for most of us we either do a horrible job at showing our emotions, or too good of a job. It's confusing, but that's how we are. Signs of interest? Well, we'll want to be around you. If we like you, then we're going to want to spend time with you. But here's the catch, at the beginning you'll have to make the first move. From my knowledge, most of the time girls want guys to make the first move.
Also, we might smile or stare if we're interested. Or act...well, stupid and flirtatious. Until we feel like we don't have anything to prove to you, we're going to try and act as amazing as possible. Not crazy like we might act with our friends.
And if a girl wants you to try harder, usually she'll either confront you or she'll start kind of acting pissed, because she'll feel unwanted. She'll feel like your relationship is just a pity thing, and you're too nice to end it with her.
I mean, If you're interested in a girl, you have to let her know. Most of the time we like the attention. Call our names, hug us before you say goodbye, smile at us, spend time with us, talk to us. Just make us feel like we're special to you. It doesn't take much to impress us. Even just a simple text in the morning saying, "Morning, beautiful" can make our day. I mean, shy can be cute, but we really don't like waiting up for you, and we get bored after a while. It sounds horrible, but if you don't take control of the relationship and initiate things then we are going to think you've lost interest in us.

OOH! that is a tough question. To be honest...all girls are different. But in most cases, if a girl wants you she will be super touchy and smiley around you, and mostly she will laugh at almost everything you say. But a lot of girls, myself included, don't want to be the ones doing the work. They want boys to be the ones making the moves. So, if you are wondering
1) if the girl likes you then look for the signs of flirting
2) how to show her that you are interested...again be touchy, but not in a creepy way. There is nothing worse than a guy you don't like touching you a lot. But in the case that you can tell she likes you, lay your moves down subtly. She will pick on them. Also, introduce her to your buddies if the moment arises.
3)and if all of the above works out and you decide that you really want to go after her then straight up be a man and ask her on a date. Girls hate being the ones to ask the guy out. Really it is just lame when the guy doesn't take the wheel.
