I am losing weight now. I am not a vegetarian but right now I eat 2 vegetarian meals a day. I would strongly recommend stir frying a veggie meal in light olive oil. I stir fry carrots, red peppers, sweet onions, broccoli and mushrooms. I add a number of spices including pressed garlic. I serve it in a bowl and also pour a little light soy sauce over the meal. Takes me 15 minutes to prepare.
I also do a number of salad variations and occassionally add a lighter cheese. Finally, I serve myself vegetable; lentil; tomato rice; etc. soups.
For breakfast, I eat multigrain Cheerios with bluberries (which are low cal), coffee and juice. my other breakfast is a whole grain bagel, light cream cheese and juice/coffee. Between meals I eat apples and steamed veggies.

I am also a vegetarian and I have the same problem. Its so difficult to cook something yummy without it being really bad for you. I have become an avid crockpot user. throw in a few cans of different veggies with some seasoning and let it go. soup is fantastic and easy. also, lean cuisine is good for the busy lifestyle. I ordered a cookbook for ideas.
just eating a plate of some sort of warm veggies along with beans and rice would probably feel good on your stomach. it's OK to sometimes eat more that can jump start more weight loss you don't want your body to think you're starving.
