I am on a diet and I feel like I'm never eating meals, just snacking. Any ideas?

i want to sit down and actually eat a meal not just muching on fruit and veggies...as far as it goes for me for a meal would be a bowl of oatmeal or cereal or brown rice. also I'm vegetarian By the way. so any meal ideas the don't require much cooking?
