I don't know technically what it is.. but I learned it from my grandmother.
You'll need:
Chinese (long) green beans.
1 small can red curry
Chicken
1 can coconut milk (I use the brand Chaokoh)/ or you can use condensed coconut milk.
White rice
Salt, Pepper, or any other seasonings you'd like.
- Cook as much rice as you want/need as you normally would. Either in a rice cooker or on the stove following the package directions if you get yours from the grocery store.
- Cut up the chicken into strips or squares, remove bone if there's any (I buy boneless) and remove any fat.
- Cook chicken fully on the stove in a small amount of oil.
- While that's cooking wash and cut green beans in half (twice if you want smaller ones).
- Season chicken with salt/pepper to taste, then add in a tablespoon or two of curry into the chicken in pan, coating the chicken and continuing to cook.
- Add in coconut milk and green beans to the chicken stir well. Cover and simmer until green beans are tender.
- Put that over rice and you can add more curry to individual plates if anyone wants it spicier.
I know I wasn't more specific but it all depends on how many servings you're making and its really all to taste more than specific amounts. So just play with it and find what you like.

You should check out the YouTube channel Sorted. A lot of their recipes are very cheap, easy and fast to make, and they look really delicious too!
Simple stuff. Roasted root veggies are some of my favorite things. Cut up a bunch of onions, parsnips, taters, fennel, celery root, beets, whatever into bite sized chunks. Toss em with salt pepper and a bit of olive oil. Shrooms too if you like em. Then roast it all uncovered at 425 until they start to turn good and black at the edges. The smell is effing awesome. Leave the beets out if you don't want everythingbeet colored.

Chinese Hot Pot, healthy and fuckin' delicious. I use a soup base called "Bun Rieu Cua," if you know where an Asian market is, 90% of the time they'll have it.

I bake...alot today I just made lemon bars, they're really simple if you like them just google a recipe. If you're up for a challenge go get some bread flower and yeast, homemade breads are good but VERY difficult. Outside of that stir fry is so simple its hard to screw up above that curry and then some.
I noticed you like Indian recipes..
