It's possible something in your personality helped him discover a new part of himself. He may also be maturing realizing what's a healty lifestyle, both mentally and physically.
However, make sure you don't feel like your responsible for him and pressure yourself to think you have to some how help hime evolve.
I don't now how long you've known him, if this may be a temporary change for him or a game he's playing with you as you are apparently a different type of girl than he is used too and may be trying to figure you out to get what he needs.
Time will bring out his true self. Communicate.
Sure, it's possible, but the guy has to want to change for the better. He's becoming more mature as he gets older, and it sounds like he's much more interested in you than the other girls he previously dated.
