Its not a smoking gun. This one sign doesn't immediately equate into = "he's so into you"
But its definitely a good sign. That kind of body language to me in a man around a woman is a sign that he was trying to compose himself. As a way of trying to make sure he could put his best self forward.
Even I have done this before. When a girl kind of suddenly enters the room when you weren't expecting her it can be kind of shocking, because now it suddenly feels as if a whole new set of rules for how to behave apply. This is even more stressful if its a girl you like.
So taking a moment to catch his breath and run his fingers through his hair I think is a good sign he is trying to keep his cool around a girl who might make him a little nervous.
