Your weight will go back down. My advice is to only weigh yourself once a week (probably not on your cheat day, lol) and keep track of it overtime to help maintain a long-term perspective.
Weight fluctuates quite a bit throughout just one day, much less a week, so not getting on it everyday will make you feel better and keep your perspective more in tune with the long-term nature of health and fitness.

The best way to lose weight is to stop eating things that are unhealthy. Don't give yourself a cheat day, that just means you never get entirely used to eating healthy. Go cold turkey and you will never have those problems.
The "weight gain" you describe is not fat gain. It's just not possible for the human body to gain 2 kilos in one day. The weight comes from the food you've eaten, plus water weight. So you'll lose it again. By the way, 800 kcal is way too little to eat for a full grown woman. Eat at least 1800 calories a day, or you'll have a breakdown and start eating unhealthy stuff every day.

I don't think you'll lose 2.7kg in 1 or 2 days. But surely next week because most of the "weight gain" is food weight. :)
800 kcal is not enough. You need to be eating at least your BMR. At 800kcal your health will suffer.
easy... just work-out for 2 weeks or so :)
