Why do I always poop so much when I go back on my diet?

I'm trying to lose weight but every ones in a while I'll slip up and eat like I used to for a few days even a week and go back to eating healthy. Tons of water and for 2-4 days after I start my diet again and drinking gallons of water I'm like shitting more than I thought humanly possible.
Why do I always poop so much when I go back on my diet?
