Is it possible that eating healthy also includes eating more plants? Healthy foods naturally contain more fibre and considering that your digestive system actually adjusts itself accordingly to the amount of fibre that you're consuming. You can think of it like shifting gears. If your body is used to consuming not a lot of fibre, your digestive system will grow accustomed to working extra hard to digest your food. Suddenly feeding it a lot of fibre when your body is in a "high gear", so to speak, will cause the food to literally fly right through you lmao. It usually does take a few days for your body to adjust itself, so maybe that's what it is.
I'm not a health expert though, someone just told me this once and it sounded plausible to me lol. I could be totally wrong.

Are you eating more fiber? Because a sudden increase in fiber could lead you to temporarily poop more. Drinking more water also helps with constipation. It will sort itself out if you stick to your diet. But if you keep going back and forth, your body will never get used to your diet.
