Diets, as such, don't work long term. They are not sustainable. To lose weight, some simple changes to your eating habits are all that is required. It is so gentle, it becomes part of your life and is therefore sustainable. I don't lose out on anything. I just chose the lowest fat and lowest sugar products I can find. I don't like milk, but chosing skimmed milk instead of full-fat milk is a start. Lighter-then-Light mayo is 1/10th of the cals. No more than 125 ml of pure fruit juice a day. It's full of fructose, fruit sugar.
My result? At the beginning of this year I was 30lbs down from what I was 18 months earlier. It's still the same after 8 months.

It's really simple: just don't buy the crap you shouldn't eat/drink. When you go to the store only buy things that were on your list, don't just go out to buy "food", always make a list of actual items you're going to buy. This is good practice whether you're on a diet or not.
Make it enjoyable. You find many recipies on the net. If you do that, its no longer a diet (negative), but a way of life with good tasty food (positive). And eating a piece of junk from time to time (once a week or less) will do no harm if you keep it indeed a rarity.
I can't stick to a diet if it cuts out my favorite foods. So I just have them less often and in smaller quantities.
It sounds like you might be gluten intolerant. Unless the carbs you ate didn't contain gluten, but I think most do.

Well I never cut out carbs because our bodies actually need carbs like grains and potatoes. I have cut out refined sugars (cakes, cookies and other sweets) I thought it would be hard it was but after the first week it was fine and I felt better than ever. You should always have balance in everything in life. To stay on track I look at how far I have come.
Probably for a while, I don't really go by a diet, I just try my best to nourish my body with good wholesome foods, so that way if I do eat something lets say some frozen yogurt or something I won't feel guilty at all and know that i'm trying to do the best for my body. I know what foods make me feel good and I know what foods make me feel shitty, so its better to stay away from them anyway if they truly have no benefit.

However, my last diet, @Luke044, was around Lent Time back in February, where I gave up Sweets for Lent for 40 days and Got back down to my Normal weight.
