STAYING ON A DIET , How long can you last?

I've recently only been eating proteins and fruits and veggies , the best thing I have done is cut out bad fats and carbs ( I bloat up quickly if I have carbs) , however I start to crave junk food probaly about 2 days of clean eating, i was just wondering how long you have lasted without touching any junk food and how did you mentally stay on track?
