I understand I can't spot reduce, but what are ways I can lose stomach fat? I hit the gym about 5 times a week only doing upper and lower body exercises, I don't really do ab workouts besides mountain climbers. Should I walk on a treadmill for about 30 minutes daily to lose some of that fat? Or will that ruin my muscle gains from lifting?

I think honestly you should be attentive to how many workout you do. You’re very active but non fat burning exercise improves musculature and brings out superficial fat, that covers muscles.
You can lose belly fat by reducing sweets and regularising your eating habits, you’re already a sporty person so from this point there isn’t anything more to do.

No that wouldn't loose any muscle gains. HIIT workouts usually do that whilr walking is considered as LIIT , so its all good. Also you should cut some calories
