Mother is on a diet!

So, my Mum is on a diet. Good for her! But she is such a pain in the ass about it. First off she's doing a no carb diet. (Which in my opinion is bad for you.) So I'd be making a bagel and she says things like, "Oh I wish I could eat that...". I know I should be supporting her but still it's annoying. The thing I don't like about her dieting is, is that I don't think she'll take the time to research her foods. I made a chili and she wouldn't eat it because apparently beans are too high in carbs...but she doesn't seem to understand that they are a complex carb which are way better for you than simple carbs. They are also high in iron, protein, and fiber. But all she sees is how high in carbs they are.

Any suggestions I could give to her? I think all these fad diets are just stupid.
