Does intermittent fasting pose any threats, or have cons?

I was recommend to follow intermittent fasting to help with insulin resistance, since I have PCOS and possibly at higher risk for developing type 2 diabetes. I’ve been doing IT for over 2 years, while I’ve seen many positive changes during the first year, I even got a regular period for a few months. I’m now at a standstill. I gained weight back and now my period has stopped coming for almost a year. The doctors keep telling me to loose weight, but when I dropped 30lbs, it still didn’t help. I heard that IT increases stress hormones, is this true? And if so, how can I improve my health again? I’m currently working out for an hour 4 days a week and eating a vegan, high protein, Low glycemic diet, but with no luck. Thanks in advance!
