Its dangerous. I mean, I've done some harsh diets, but not as stupid as an apple a day.
You need more then that, a lot more protein, and also to balance your electrolytes etc.

If you are only eating an apple a day then that is very bad. That is not even enough to support proper brain function. You also need protein.
make a schedule-eat at least 3 times a day,set your alarm to remind you to eat breakfast,lunch and dinner or a snack (eating late isn't healthy)
eat bread & fruit. drink milk. no prep time involved. just throw it in a bag.

Only an apple...that's really hard on your body and your stomach has probably shrunk, which is why your appetite is diminishing...you need to get back on a schedule of eating 2-3 meals a day with some snacks
I guarantee, after enough time, you will get plenty hungry.
