Well, I would eat just about anything (not McDonald's though) and I can prepare just about anything. Still I think if I were to date a girl with a very specific diet, I think it might be a minor inconvenience, yeah. Mainly things like food costs, or extra prep, or something like that. Plus small things like if there's something tasty, I won't be able to just at any point go, "aw, man you gotta try this", or something similar.
Still while this would be a minor inconvenience, I am pretty sure this is something I can get past, so long as the girl I was seeing could be patient with me, or more importantly, not try to preach or dominate MY diet like a dictator. If things can be live and let live, then sure, I can get past it. Why, not, right?

It can, but that all depends on the individual and what they want when it comes to a partner. For me it wouldn't be a problem, but I know some guys may be able to deal with it at first, but after some time they could find it a bit hard to stay in the relationship. Like a person on a meat eating diet may find it difficult to be in a relationship with someone who is a vegan. They would have to buy accordingly, and I'm sure if you're in a relationship, you're going to want to be able to sit down and eat with your partner, and usually you would be eating the same kinds of foods... and if one refuses to eat something it could cause some problems.

Only if they plan on cooking for each other. I don't intend on ever having anyone else cook for me so I'm cool with it.
