Does people's thoughts and feelings really change in time?

I have a girlfriend of 3 years now. Everything's perfect normally, but we've had some rows in the past. She took space many times (at least 3 times) because of our arguments and etc. I was the one who always reached out after 4-5 days. Because of my love etc. I know I shouldn't of maybe, as it's a space request and I am violating it somehow. But like I said, out of love and impatience. Anyhow. My question is this. The times we had spoken about everything, once I remember asking her that what would happen if our relationship ended one day? Wouldn't you ever think to reach out? (I ASKED THIS BECAUSE LIKE I SAID OUR RELATIONSHIP IS NEAR PERFECT NORMALLY). She said, I'm a very stubborn person, no matter how much I love you, when it's over I'm done. I don't look back. I may regret but that's how I am, even if I regret, I will never.
So basically I wanna know, if after all the relationship in general is great, and you have so much love etc. Don't they still come, or won't they even try?

Some people do not Value time. Women are feelers and if there is no emotional connection then they are done.

But what if she is too stubborn? I mean if overall the relationship was good and had very good memories, will she change that idea of saying "I will never look back when it's over"?
Mine ofcourse changes. Example when I'm so mad at her... I just feel like not talking at all. After couple hours, I just can't stop thinking of her. That's why I contact. You see I don't allow my anger, pride or ego go in-between my feelings towards her.
