My wife just made soup. It was a thick and savory puree. When I asked her what it was, she said "Vegetable". Then she admitted that it was cauliflower soup, which was delicious. Ingredients also included onion, garlic, ginger, coconut milk, chicken broth and spices.
When she said it was vegetable, it was an inside joke.
Here's the origin of the joke.
We vacationed in Ireland a few years ago and a B&B asked if we wanted some soup with our meal. I asked what kind and they said vegetable. It turned out to be turnip or rutabaga or something. I told my wife, "Well, it IS a vegetable" and we laughed.

Once in Germany, I went to a small inn somewhere in out in the countryside. I asked for a sandwich and they asked what kind. I asked what they had, and the lady said "head cheese" or something. I asked what other kind of sandwiches they had and she curtly said "The other kind of meat." Ahhh, mystery meat. ROFL
I was so hungry that I got the mystery meat. It came on dark bread with butter, and meat looked like head cheese. It actually wasn't bad, though. Hey, when in Rome...
Anyway, when I think of vegetable soup, it has peas, carrots, green beans and other vegetables floating in a broth. How 'bout you? And have you ever had any similar experiences?

I think of what my wife said... that relationships are like soup... you put in lots of ingredients, all of them or else it's missing something.
And you keep stirring and gets better as it cooks. ... I added that part.
Beyond that, I agree with your view on veg soup... peas carrots potato (eventhough that isn't a vegetable). I think of Campbells soup in a can, that's what I had as a kid although only God knows what is in it...
Mystery meat in Germany, that probably be ok and likely some part of a goat. But in Hong Kong, all bets are off...
I think of vitamin C and good health. I usually find my favourite veggies soups are either cream based broths that are white or yellow or tomato based with possible cheese added in to. I prefer tomato soups I make at home cause when I buy them from places like Tim Hortons, it feels very processed and I wonder if they use real tomatoes in it. When I make tomato soup at home using real tomatoes, I know it will taste amazing cause it uses real vegetables.
I like cabbage soup but we use a potatoes and we exclude onions and green beans. Our cabbage soup is roasted carrots, potatoes, cabbage or lettuce or celery stalk, no spices and no garlic, and real tomatoes that become tomato juice after one hour of boiling. You need a lid or it might evaporate. We mix it with unflavoured unsalted and cooked white rice with no butter. I usually make enough for 3-4 meals. I think I once used over 13 Carrots in my soup. I like to make it in bulk.
i read your question a couple of times and in my mind i saw alphabet soup, which is totally different. but yes vegetable soup is as you described with potatoes and celery too.

I make Poor Man's Soup. I have a container which remains in my freezer. At the end of a meal, if there are any leftovers of vegetables or meats, they go in the container and get frozen. I try to make sure some roast beef gets into the mix. When the container is full, I pull it out, defrost it, heat it, add some beef stock, tomato sauce, and a thickener, and cook it for a few hours. Always good!
Actually rutabaga cmriced up in a soup or stee is good but I like lots of potato pieces diced carrots, onion, celery, peas, corn, peppers and chunks of beef in either s vegetable or beef broth. Vegetable beef soup.

I was preparing chicken soup... and the felines stole that protein like the ninjas they can be... lol I think of a mix of chunky veggies in a broth. Your wife's cauliflower soup sounds delicious!

I agree with you…. I think of veggie soup contains a lot of floating vegetables in a light broth.
