What are the Best Types of Bologna?

I haven't had all kinds, but I see them all of the time. What are the best tasting ones? Beef, turkey, etc. We all know regular pork bologna tastes good so that can be left out of the question.

Deli meat contains nitrates so if you like to eat sandwiches, I recommend cooking your own chicken and slicing it into your sandwich. One chicken could make 12 sandwiches so if you have a house of 4 people, that is 3 sandwiches per person.

I tend to do crackers, cheese, and then turkey, bologna, chicken salad, or tuna. Sometimes I'll add condiments.

I like regular mustard and honey mustard with it. Mayo is nice too and sometimes bread & butter pickles. Other than that, a slice of cheese.
