I've already seen the answer and I'm disappointed. It seems like a waste of money, especially since it only works with avocados. . The sales people were laying it on heavy with that pitch.
At first I thought it was a vision system, which would have been way cooler. But maybe I'm biased because I used to work with vision systems for food products. You could even look through those avocados to check for a pit. Of course avocados aren't pitted, but it works with peaches, cherries, olives, etc.
It's a sensor telling you about the ripeness of fruit before you buy.

There a shelf with 30 portable devices which check price and ripe grade of fruits in grocery close to my location. No one uses it or I haven't seen someone does.
If you zoom in it says ripeness index. Personally I just give them a little squeeze.

Without seeing the image, it's a bit of a mystery! If it's something Europeans might be familiar with, it could be an exotic fruit, vegetable, or herb commonly found in European grocery stores. Maybe something to check the level of ripeness. Might have to do with checking the level of certain evaporated molecules from the fruit or vegetable.
Some kind of ripeness scanner, I would guess.

Looks vaguely akin to a pineapple peeler that is in a supermarket near me. But for avocados instead.
Maybe it makes guacamole or avo slices. I'm going with slices because that is harder to do neatly.
There are similar devices in some places in Türkiye and they usually help us find out the price of the product.
