First, I think your paragraph might be a bad idea, it could easily backfire. The reason why is she could take the "your ex sucks and you need a better guy" part the wrong way and you might put yourself in a bad position.
Instead I would just revise the paragraph to only include the compliments of her beauty and everything you like about her, just that. It will still make her feel better and isn't making you come off to strong as your "prince" part might have done.
Also, tell her how you feel. In person and upfront (be direct and honest about it, no beating around the bush). Give her the paragraph too when you tell her. Trust me, it is always a good idea to tell her your true feelings. (a) She might feel the same and like you and (b) it gets a MASSIVE weight off your chest.
If you never tell her you like her, you are just going to hurt yourself by bottling up your emotions. She may also find a different prince in your place if you don't tell her. Even if she rejects you, having a solid "No" answer is better than possibly having missed a "Yes" or never telling her and rejecting yourself.
