Sometimes the guy doesn't really love you. They just say that because that's what they think you want to hear, because 99% of the time, it's the girl who falls in love first and then wants to rush the guy into love.
But if these guys really are getting that attached, it's one of two things
1. They've never had a relationship before, I mean nothing at all with a female. So it's all new to them and leaves them vulnerable to get attached
2. They just want to rush things so they can get intimate quicker.
It's highly unlikely that a guy gets emotionally attached that fast, it's usually just a sense of possessiveness.
There are worse issues to have. Just tell the guy that you're not into the whole lovey dovey stuff but you'll blow him behind the gym. Then he'll be telling you he loves you in a whole different context.

Just be straight up from the very beginning. No intrigue just tell them you only do casual sex.
Wait you're contradicting yourself or I read it wrong. Do you want a relationship but want to go slow OR do you not want a relationship? They are not at all the same thing.
Figure it out before you get involved with snyond and tell them which upfront.

I have a similar issue. I think it's because I'm easygoing, easy to talk to, entertaining, and just overall a good person.
