I've now had 3 dates with a girl and they've went really good. My sister happens to be one of her roommates and she said on the last date she came home happy and had a really fun time. I asked her out for another date, but she said she has a lot happening right now, which includes her planning her sister's wedding and being gone for 2 weeks, and then only a couple weeks left of the semester after that, which she'll be busy with work, getting ready for graduation and other things, so it would be hard to have one. She said if a day opens up after the Thanksgiving break she'd let me know. Usually if a girl says "I'll let you know" that usually implies a no. But my sister said she told them she's willing to have a date if she's open. Wouldn't she put in more effort to make time though if she really was interested?

This could be legitimate. I’ll let you know doenst always mean no. It’s almost Thanksgiving and that’s understandable.
Just let her get back to you.
She is not really interested or she is playing games... either way is a hard pass. Move on.
