Why do some, of you guys show that your one interested in a female, then the next you vanish and disappear, then he tries to return Weeks Later?

Like, I really would like to know. And be truthful, I literally know someone a guy who does this stuff to me. Just over the years I've gotten better I'm not giving a damn but it does become to a point where it's hella of annoying. Like one minute we're texting and talking, then poof you're going.
My last message to him was baby you're the best and I blew him kissing face 😘 with blowing a heart. And all did, was read later on that day, then had hearted it, ❤ but didn't respond. But we were talking about church and I was saying to him thank you for agreeing to go to church with me at some point one day. That's basically what I said baby you're the best and blew him that kiss just showing my appreciation. And don't worry, not call each other nicknames like all the times lol. And this all happen on this past week on a Tuesday. Now and with my situation, it's not that deep, because he is only my (friends with benefits) and I know, he asked me two different times most recently if he can get some yummies out of me, one was on Sunday the past weekend and then he asked again on Monday. So I didn't give in, because (HIM) and I, already agree on just being friends AND NO SEX. Because just a few months ago when I was trying to make a move on him he was turning me down I was acting as if he didn't want it. So I'm like no cheeks all right, keep the same energy even for later. And the thing is with him and I we are both attracted to each other we both have feelings for one another and we do care. If you're going to disappear because you can't get sex out of me. Then leave me alone, and if it's something that I said please you guys comment below and let me know. This man has been doing this for a while and literally I'm just curious now. I get it he may not be interested in me as he says, and there could be another female. We had this discussion about a few months ago and I completely remember telling him that I will contact him when I'm ready to talk, I told him I'll reach out to him. Then he contact me randomly contact me out the blue on Sunday trying to get some.. Then he tries again on Monday. Then on Tuesday was the last time that we actually talk. But I feel like he'll try to reach out to me again either sometime this weekend or either just coming up week. Smh! Like I'm really trying to give him the benefit of the doubt of him just trying to be just my friend without the benefits. But I honestly don't think that is working for him. Smh
