That depends. If there was one and she deleted it, something might be up. Or she just thinks she doesn't need to share her private information with the entire world, but if she puts a lot of other stuff on there, that might not be the case.
As long as it doesn't say she's single...no big need to worry. But if you think it's quite important or you feel insecure, just meet up with her and see if she's acting normal. If it's a quiet time, ask her why she deleted your relationship off of Facebook.
I've watched this often: Whenever somebody hid the status "in a relationship with" it meant no good. I can only guess but I assume you have a long term relationship, she seems to be bored by it as I see it...talk to her! This is always alarming because why would you take the time do this if you're really in love and happy...

You should asker her about it upfront, face to face. "Why does your FB say you're not in a relationship anymore?"

I believe it is a very bad sign. Talk to her, but be cool about it. Bring the subject up casually and do not react at all, no matter what her answer is. Prepare something completely different to talk about right after.

It specifically says "single" or just doesn't say anything? She could be cheating on him even if it said "married" that doesn't change anything. Honestly if their relationship is based on Facebook status what kind of relationship is it? He can't even call her and ask her?

well yeah, duh lol, but it makes a significant difference if you are in a relationship with someone who basically tells everyone she knows "I'm single" or "There's no one that I'm involved with." Why are you trying to act like it's not a big deal when it is? It's shady and a tad bit disrespectful. Just because she did it via FB doesn't make it meaningless. If you had a boyfriend you wouldn't mind at all that he practically told everyone there's no girlfriend in his life?

Did she remove other details too? If yes then I wouldn't worry. If no, then yes that is a warning sign.
