Do you know when to use 'have' instead of 'of'?

It's either, "would have" or "would've". These are things you're SUPPOSED to learn in English class! That's part of the reason we pay through the nose for school taxes even if we don't have kids!!

'of' is a preposition and cannot be used in place of a helping verb 'have' either spelled out or in it's contraction form.

"would of" is not correct.

This is surprisingly a good question. I suspect a lot of people mishear "would've" as "would of" and that's why they get it wrong.
