It's because they think that if a woman is playing hard to get with him, she must play hard to get with every other guy. If she does that with every guy that means that she's not the kind of girl who'd cheat or quickly leave him to jump on a new dick. That's the real reason guys don't take girls who they see as being "easy" seriously. Fear of being cuckolded by such a woman mainly.
The thing is that's a naive view. Often playing hard to get is just a tactic a woman uses to convince a man that she's that kind of girl, but it doesn't means that she does this with every guy. She might have had sex on the first date, had one night stands, casual "friends with benefits" type relationships with other guys before that. She plays hard to get to fool him.
For guys who understand that this is often the case then they'll see it as a waste of time and move on from such a woman.

Game playing is ridiculous, for both sexes. Animals play hard to get so maybe there's something to it.
I like hard to get women because I believe that they are simply just better.
If someone has high standards and expectations, it is likely that they have superior qualities themselves, since they possess the confidence to have those standards.
Those who are eager to date mediocre people are likely to be just as mediocre themselves.
I don't want a mediocre partner, I want someone who has rejected hundreds of people before me as inadequate, so that they can finally meet me and deem me worthy of the wait.
Only men I know who really prefer women hard to get are players, and it's because to them the woman doesn't mind anything, what they like is the hunt, so the most risks, the hardest, and the worse they have, the most they enjoy.
If you think it well, if a man respects your boundaries would never go so far for you, because he will respect your wish to be alone, or to be with other, the one who will fight is the player.

I really don’t know. The only thing I can think of personally, is that a girl who is hard to get probably isn’t treating you unfairly. Meaning, some girls will fuck guys 5 minutes after meeting them, meet a “good guy” and make him wait a month for sex. If you’re a hoe, except with me, I’m done with you.
If you’re not a hoe, and you aren’t easy to get, and you treat everyone like that, that just feels more fair than dealing with sluts who put out the pussy to everyone except you.

For me it has to do with quality. If she is all over me on a first or second date, I assume that is just how she is and that she has been with lots and lots of guys. Big turn off. If she makes me wait weeks before she will even hold hands then I know she is worth the effort.
The last two options basically. If a girl is willing to jump into a relationship immediately it means her feelings don't mean anything, if they appear or disappear overnight. Also if a girl is easy, she had many guys before you, and will jump to the next in line easily, so you can't have long-term plans with her. Also, higher risk of STDs.
Being hard to get signals that she’s a high value woman. No guy wants an easy girl that anyone else can get too. He wants the girl that the best man can get, and he wants to know he’s that man.
